No. That's the opposite turnaround. This one only runs 5-pin output into 3-pin input.

03Do I lose any control using 3-pin fixtures?

No. DMX data rides on the first three pins. The extra pair on 5-pin connectors goes unused by most gear, so nothing is dropped.

04Can I use an XLR audio adapter instead?
